A premium Italian style hard cheese, produced to an authentic recipe which gives the cheese its characteristic piquant flavour, dry firm texture and light creamy colour. The cheese was awarded PDO status in recognition of its unique qualities. Only cheese made at the Mogeely dairy, using milk exclusively sourced from local farms and made to our recipe, can be truely called Imokilly Regato.
In addition to the traditional standard Imokilly Regato , we have developed Regato Light as a reduced fat, healthy option and Smoked Regato for more sophisticated tastes.
A semi hard white cheese with a smooth, distinctive mellow flavour, subtle lactic notes and a pleasant creamy texture. Our expert cheese-makers ripen Monterey Jack under controlled conditions to develop a flavour which is the perfect accompaniment to spicy food, especially Mexican style dishes. Monterey Jack is widely appreciated for its taste and great versatility. It can be grated on a salad, sliced to go in a sandwich or melted on baked enchiladas. Whatever the application it is the perfect complement to virtually any dish.
A swiss style cheese and the appearance is similar to Emmental, with a yellow-wax rind and a semi-firm yellow interior. The flavour is mild, buttery, nutty and slightly sweet. It is an all-purpose cheese, good both for cooking and for eating as a snack. It has a characteristic smooth, shiny-yellow body, and a creamy supple texture.
Mallo cheese has complex piquant flavours, subtle nutty, fruity back notes and a slightly granular texture, characteristics of a premium Italian Parmigiano Reggiano. Our expert cheese-makers have drawn on decades of experience to perfect the unique flavour and structure of Gran Alto by combining a traditional recipe with a carefully controlled maturation process. The exceptional structure and outstanding flavour of Gran Alto is the basis for its versatility in numerous applications, including pastas, risottos and as a garnish in a range of dishes, soups and sauces.
Calow cheese is high in calcium, with only 10% fat, a sliceable cheese which has a smooth texture and a piquant flavour typical of Italian hard cheeses. Our expert cheese-makers have drawn on decades of experience to develop a fantastic 'healthy option' and enhanced calcium levels for good bone health without compromising on flavour. Its close texture makes it excellent for slicing and as a versatile ingredient in salads and pasta dishes. Its ability to melt makes it an excellent low fat option for cheese sauce and pizza to replace Cheddar in Mozzarella mix.
